KITTREE - you may love this.

My mom taught me this dish. She is great at cooking it. I am not sure if there is another name for it, but from since a kid I have known it as "Kittree". Here is the recipe for kittree.

1/2 (half) onion

4 or 5 fegs of garlic

1/2 large pepper or about 3 wiri wiri pepper (gives great flavor)

2 lbs cut up chicken

1 and 1/2 pint rice (brown)

3/4 pint of split peas (yellow peas)

black pepper to taste

Fine leaf thyme to taste

about 1/2 stem fine chopped celery.

1/2 (half) stick butter.


Cut onion , garlic and pepper in to small pieces and fry same in a small amount of oil. Stir until garlic and onion appears to be getting brown. Add 2 pints of water and bring to boil. Then add split peas to pot and boil for 15 minutes. Add rice and allow to boil for 20 minutes.

In the meanwhile you can fry the cut up chicken without or with seasoning to your taste, in another pot. After the rice has boiled for the 20 minutes as suggested above, add the fried up chicken to it. Add the celery, the black pepper, the butter, and the fine leaf thyme. Stir and allow to cook for another 10 to 15 minutes. (You can always add water to ensure the rice is totally cooked. )

Serve hot or stale. Enjoy.

Cook-up. - Guyana's best!

This is the most popular dish cooked by many Guyanese and other Caribbean nationals...In Trinidad it is known as "pillou". But in Guyana it what we call "cook-up" The name itself is a give way. Meaning you can almost add "anything" to this pot as it boils.

What you really need to cook this fantastic meal?

1 large onion
4 fegs garlic
Pepper to your likeness ( one whole pepper for me is enough)
2 lbs beef (with bone is good) or chicken (or simply fry fish and eat on top of cook-up when done)
1 and 1/2 pints rice
2 tablespoon cassareep
Salt to taste
Fine leaf thyme/married man poke (don't know the real name)
1/2 stick butter
2 tins black eye
1 tin Channa (chick peas)

Cut up in small pieces garlic, onion and pepper and fry in hot oil. Add cassareep whilst frying seasoning. Then add 4 pints of water and beef. ( some folks like to fry meat in seasoning before adding water. Fry chicken separately before adding to cook-up pot.) add salt and fine leaf thyme.


Pressure, if it is beef or boil until tender. Then add rice. When rice near finish cooking add butter. Also add the black eye and channa at least 10 minutes before cook up is finish cooking.

Serve hot. Eat great also when stale.

A Variation in Capitalism?

Have you thought that there might be a new type of economics that is much needed in our world today, other than the profit motive? And if so what type of system would be good for our world today? Would this new suggestion(s) be able to prevent the current and regular financial collapse that is going on Wall street and around many parts of the world today?

What about an economic system with little emphasis on profitability?

What about a system that penalize jobs out sourcing and rewards localization of jobs?

What about big corporations providing more and more public services usually left for government to do?

Look at it from the perspective of how the churches provide education at many levels including from primary to tertiary and still do so to this day in an excellent manner. Of course education has also been supplemented by the government as well. Thus it is possible for government and private institutions to cooperate and work together.

What about corporations using 40% of their profitability for development of communities, pay 40 % of it as taxes and reward shareholders 20% of its profitability?

Think about this.

How Important is Prayer?

PITS -Pray In The Spirit.


And always Pray in the Spirit (PITS) on all occasions, with all prayers and request...As believers we should always be praying, whether we are on the mountain tops or in the pits way down in the valley, our hearts should be crying out to the Almighty God, under all circumstances, for God to hear, forgive our sins and heal our land. And this is exactly what God wants to do, for he said: If my people which are called by name, will humble themselves, and pray, seek my face and turned from their wicked ways, then I will hear from heaven, and forgive their sins and heal their land.

This is indeed an amazing thing that God wants to do. However it hinges on us first doing four things: 1) Humble ourselves, 2) Pray, 3) Seek his face, and 4) Turn from our wicked ways, then God will do three things 1) Hear from heaven, 2) Forgive our sins, and 3) Heal our land. As we reflect on this we can easily see how fundamentally important prayer is before God will do anything, for our benefits and the benefits of others as well.

We always need to bear in mind that we should first examine our own life to unshackle any pride, so that we can bring ourselves into a state of humility before we commence our journey of walking with God in prayer. Pride is a major deterrent of God's presence, and as we know, this was the downfall of Lucifer the chief angel in heaven, which resulted in his expulsion from heaven along with one third of the angels that followed him. Having said that, we should understand that pride will hinder our prayers and prevent God from hearing us.

After we have eliminated any pride in our lives and have humble ourselves, we should then commence our prayer journey. We can pray about any and everything, anytime, anywhere and for how long we may wish or have the strength to do. The most effective prayers are not only those done in a spirit of humility, but those done in the spirit of fasting and on our knees. For success in our prayers however, and like anything else in life, such as in our academic careers, there must be consistency, such as when we study at a fix times, we should be praying at a fix time on a daily basis. When we do this we will witness the manifest greatness and awesomeness of a great and merciful mighty God.

Following our prayers, we can wait on God and seek his face for direction on what to do and where to go, and to accomplish God's will for our live in spreading his message of love and hope for all mankind, irregardless of our religious persuasions. God has encouraged us to seek his face, for he knows how discouraging and complex this world is, we are living in today, and how frail and insignificant we feel at times, so that He almighty God can intervene to bless us in all ways possible. A chief characteristic required in our lives, if we will seek the face of God, would be our determination, no matter what that natural instinct may tell us.

Finally a major requirement mentioned by God was that we should all turn from our wicked ways. We must recognize that we are all sinners who have fallen short of God's glory, and therefore we need to understand that God in his mercy and love, has made abundant provision for the forgiveness of our sin, through the death and resurrection of his son Jesus. We are weak when it comes for us to turn from our sins by ourselves in our own strength, therefore God has made abundant provision, where if we confess our sins to his son Jesus Christ and ask his mercy and forgiveness he will lovingly do so.

When we do all the above, not only will God hear us when we PRAY, but he will FORGIVE our sins, and HEAL our land.

Hopefully I can write more on the last paragraph above, at a later date.

Bucking The Horse

Sometimes it is much easier and better to go along with the acceptable standards, than to buck the horse an d be branded as off the wire by those who may disagree with your style of thinking and operation. However to sometimes solve some types of problems it may require of us to get off the bandwagon of the common options and come up with something either completely new or even unorthodox. This of course will set you up for an onslaught of cruel attacks, on you as a person and not the issue on hand.

For example one area, if you may be wondering what I am writing about, would be the question on how to solve the Palestinian and Israeli conflicts. The usual solution suggested is two state solution, or as some Arabs want the destruction of the Israelis by driving them into the sea. And even though the latter is not an option, the former is not totally irrelevant. However I don't think even after a two state solution is reached, the demands by the Arabs or Palestinians will cease.

Now the unusual solution for the Palestinians and Israelis conflicts I would like to suggest is the removal of the Palestinians completely from the Gaza Strip and the West Bank and resettle them in the other Arab countries such as Saudi Arabia, Egypt, etc. and grant them citizenship of these countries they are settled in. And if this idea seems ludicrous at first, think of all the millions that have settled in the USA the greatest country on earth.

A New Corporate System

This is an idea that I want to explore but which I have not given extensive thought process to. It might be viewed as a radical shift from the old profit system which usually ties up large amount capital by few shareholders, and limits genuine all round progress that can benefit the wider society as a whole at a lower cost. Therefore this idea would need a lot of fine tuning as I go along to explore this whole new concept.

First the real purpose of corporations is not to so much perform services or provide products for the benefit of societies but rather to provide returns on investment by shareholders so as to benefit these risk takers. This point I suppose is arguable as some may want to construe that the real purposes of corporations is to provide services and products for the benefit of societies. However since managers or owners are more concerned with profit making and may possibly in an effort to make profit, do so at any cost!

Now the idea I want to explore is that only an agreed percentage such as about ten percent should be paid to shareholders or owners of the business and the balance of the so called profits should be invested into the societies such as in cheaper housing and other necessary infrastructures. This idea may seem ludicrous at first but if given serious thoughts, one would realize that if business are run on the principle that its returns should benefit the people as a whole with a better quality and standard of living. Then countries can begin to see a genuine eradication of poverty, crimes, deceases that has plagued this earth we are living on, and genuine progress in every continent.
