The choice is ours!

When we are hurt, disappointed or when we suffer losses of loved ones we can either become bitter or compassionate. Bitterness will lead us down the path of defeat and loneliness. Compassion however will lead us down the road of happiness, fulfillment and peace of mind. The people with hate and bitterness give us 911 at the world trade center. Many innocents friends and families died on that day a horrible death through the scheme of those filled with hate and bitterness. We who are alive and knows the virtue of compassion can forgive and love in return by building bridges of friendship and tolerance.

Jesus Christ the holy scriptures says on many occasions was move with compassion when he saw the plight or needs of the multitude or the individual. He in turn would heal, feed, or in some way minister to their needs. What unlimited truths we can learn form the Jesus the Son of the Living God. We all need to choose the high road of compassion and forgiveness. In return we ourselves will be forgiven and be blessed by God.

The choice is ours. What will it be?

Cut cell phone bill!!!

Cell phone bills is causing many to shed tears and become overly stressed out. When ever the bill is not paid and the line is cut, the cell phone user tend to scream , at times, obscenity at the service provider employee. And unless the bill is paid in full and at times along with a deposit, the service will not be turned on back. This is very frustrating and also a great inconvenience.

How do you resolve this?

1. Conduct most of your conversation via skype.

2. Use prepaid cell phone.

3. Make calls only when it is absolutely necessary.

4. Use a USB phone connected to skype or yahoo to make calls.

5. Plan your monthly usage.

The Mark Fizroy Mystery

Mark Fizroy, his mother claimed, was brought to the good old USA, by the church from Guyana when he was twelve years old, and then suddenly, one day when she called to talk to him, she was told Mark had vanished. No one knew how it happened. The priest claimed on the day in question when Mark had mysteriously disappeared, he had come to get the young child to join him on fishing trip. And lo and behold, he had found the child’s room empty, the door ajar but Mark was not there. There was no explanation. It was as if the child was snatched up in the rapture of the church.

“The boy never goes anyway alone!” the mother cried. “Who would do this to my baby?
I love him.” She began sob.

“What did the police do? I assume you report the matter or the priest did...” I said offering her a paper towel that was on the table.

“Oh. The police according to the priest came and look over the place. They found nothing. I have tried following up at the said precinct on any development. Not a word from ever since. I keep calling. They ignore me...” She began to sob again, dabbing at her eyes with the paper towel.

Jean Fizroy was about sixty years old. She had black wavy hair that flowed down her shoulder. She was medium height and solidly built for a woman her age. She exuded energy of determination as she showed a picture of her missing child.

“This is Mark on his eleventh birthday. He is a handsome boy. I must find him.” Jean lamented.

“How long ago was this?” I asked.

“Oh son, I didn’t tell you? I am sorry. This happen twenty-six years ago. Two days from today will be the twenty-sixth anniversary since he disappeared. Last month he would have celebrated his thirty-eight birthday.” She smiled through her tears.

“I am sorry.” I said. Thinking what could have really happened? Was the child kidnapped? Was he murdered? Did Mark run away? And if did, Why? Finally I said: “I wish I could help in someway.”

“I have never given up hope. He will come back someday. I will be waiting. Put his picture on the internet for me son. Can you do that?”

“Certainly! Leave the picture with me.”

She handed me the picture after kissing it ever so tenderly.

You must be Crazy

"You must be crazy." Jack said, watching her full in the eyes.

"Why you say that?" She asked in a serious tone, searching his face.

They were seated in a large crowded restaurant on Sheriff Street in Georgetown. It was midday and the sun was reigning in full glory. Through the open window the warm Atlantic breeze carried a salty freshness as it whipped around table cloth. Jack and Anne were both sticky from the sweltering heat.

Anne was up to her tricks. She was asking him for money again. Every time she had a money problem she came to him. The last time he was tempted to ask her if she thought he was the bank. But he had held his peace.

Jack a married man with three children, was not in a good mood. He was not going to be mincing words like he usually does. Instead he said brutally:

"I mean I am doing all these nice things for you. Treating you like an angel, all this time. And he whatever his name is, you know he is getting the hog of the beef and you want me to pay the medical bill, that don't make sense."

"You know what? You are right." Suddenly she was without a fight.

There was a silent pause.

Then Jack said, "Never mind. How could you have missed a period, even though you used a condom?"

"That's it!” Anne snapped. “I must be the most unlucky bitch in the world."

"You know something? You should not blame yourself. The condom probably had a hole. Could be the manufacturer’s fault. It happens all the time."

"Don’t be foolish. That is not possible." Anne insisted forcefully this time.

Jack persisted with his lame argument: "A friend of mine who is a medical doctor told me it happens all the time."

Anne ignored Jack Ripple and said: "It seems like my inside is inflamed. I am worried about HIV as well. It is not just the dizziness. I am beginning to feel pain."

"So you want to borrow some money?" Jack asked reaching out his right hand and resting on top of hers on the table, as he gently rubs the top of her hands with his thumb.

"No. Give me. I don't want to pay back. I have too much financial problems.”

You have the key in your hands!

We have got the key to ALL we need in life! It is right in our hands. What is it you may ask. It is prayer! God give us the key. All we have got to do is use it wisely! Unless you use the key God has given you, then you are wasting time. Act now! Go on your knees even now and began to pray about your needs, your concerns, and watch the MIGHTY power of God manifest greatly today!

How would you like to see your mountains of hardship come crashing to the ground and disintegrate before your your very eyes? How would like to see result for that matter you have been longing for? Are you faced with financial burdens, bogged down with debt, have other concerns? Why not use the key God give you and watch God work on your behalf?

Jesus was always using the key whilst he was on earth. Many times after Jesus had performed great miracles, such as opening blind eyes, casting out demons, raising the dead, cleansing the lepers, feeding the multitude, etc. the bible says he went away alone into to the mountains to use the most important key Almighty God has ever given to mankind! He Prayed! Many times through the entire night! Wow. Did you read that? The whole night through, on many occasions the Son of God prayed.

Well what about us? About you? Are you prepared to use the key God has given you in your hands? I say go on your knees now and begin to use the key God has given you. And you will hear from God. You will see the results of answered prayers. Your needs will be met.

Making Oil Roti

Ingredients:

1 pound flour

1 level table spoon baking powder

Some folks also use yeast soaked in a glass of warm water to which a half spoon sugar has been added and soaked for 5 minutes.

Method:

Put the flour in a mixing bowl and mixed in baking powder with hand. Then began to add water so as to form a reasonable bread like dough. Allow to rest for 15 minutes. Then break dough into 4 to 6 pieces depending on what size of roti you want.

Then using a rolling pin place one piece of the broken dough at a time and roll it into a round roti shape form. Then take a small amount of oil and rub it on surface. Afterwords from any midway point of the flattened dough cut across to the end witha knife or your index finger, then taking the left end began to roll it tightly into a cone shape form. Now press both ends inwards into the middle. Place in bowl and allow to soak for another 20 minutes. Complete the rest of dough in a similar manner.

After it has been soaked for about 20 to 30 minutes get ready to start cooking on a tawwa or large flat cooking pan. Allow the cooking pan ( or tawwa) to be reasonable hot.

Take one of the oiled coned shape dough and roll with the rolling pin into a roti shape, then place on hot surface of pan and turn over in about 5 to 10 seconds. Now with a brush rub oil on the surface. Turnover the roti and repeat.

Take off from stove and clap it hot for about 30 seconds with your hands. Cook the rest of the oiled dough in the same manner.

Eat hot with your eggplant choka.

Are we in the end times?

Are we living in the end times? Is the world really coming to an end? What will it be like? What does the scientists have to say about the end times? How does this contrast with what God has to say? What am I suppose to do?

Some say the planet Mars will crash into our earth, others say a large meteorite will crash into the earth around 2012. Still others say nuclear weapons will destroy the entire earth?

What does the bible say: 2 Peter 3:10 But the day of the Lord will come as a thief in the night; in which the heavens will pass away with a great noise, and the elements will be dissolved with fervent heat, and the earth and the works that are in it will be burned up. What signs should we look for to confirm these are the last days? What about the mark of the beast? Is the RFID chip being pushed to be implanted in our bodies the mark of the beast described as 666? Is the world heading for a trade collapse?

What about the anti-christ? Where will he come from? What will he be doing? Should we obey him? Will he destroy Israel?

There are so many questions. What we know for sure however, is that all the signs do point to the end times...So we should seek to make our lives right with Almighty God. When you do this you will be ready for the rapture of the believers.

Read the book of Daniel for signs.

Balanjay Choka (eggplant roasted) MMMmm!!! Tasty!

Balanjay (eggplant) choka with oil roti or sada roti is a very tasty dish. I am not going to tell you how to make the roti, but if you need to know feel free to email me at persaudanthony@yahoo.com.

What you need for the choka?

1 large eggplant (the younger the better)
1-2 wiri wiri pepper chopped finely
1 large tomato
4 cloves garlic peeled
1/4 finely chopped onion
1 ounce of butter
salt to taste
2 table spoon olive oil. (Not necessary though)


Method:

Puncture the eggplant at different angles about four times and stuff the peeled garlic into it. Place the eggplant and tomato to roast over open flames by resting it on a mesh or suitable device. If you don't have a gas range place on mesh/ wire tray in electric oven about 400 degrees. Cooked for an hour to two and turn every half of an hour or as necessary.

Next peel the skin off the eggplant when it is roasted properly and if there is too much seed in the eggplant scoop out some of it out and discard with the skin. Peel skin off the tomato and add the peeled tomato on top of the eggplant in a bowl. Add the pepper, salt butter, onion and olive oil. Then take a fork and mashed everything together thoroughly until there is no solid pulp.

Serve hot with the hot roti (preferably the oil roti).

Enjoy. But don't overeat like me.

KITTREE - you may love this.

My mom taught me this dish. She is great at cooking it. I am not sure if there is another name for it, but from since a kid I have known it as "Kittree". Here is the recipe for kittree.

1/2 (half) onion

4 or 5 fegs of garlic

1/2 large pepper or about 3 wiri wiri pepper (gives great flavor)

2 lbs cut up chicken

1 and 1/2 pint rice (brown)

3/4 pint of split peas (yellow peas)

black pepper to taste

Fine leaf thyme to taste

about 1/2 stem fine chopped celery.

1/2 (half) stick butter.


Cut onion , garlic and pepper in to small pieces and fry same in a small amount of oil. Stir until garlic and onion appears to be getting brown. Add 2 pints of water and bring to boil. Then add split peas to pot and boil for 15 minutes. Add rice and allow to boil for 20 minutes.

In the meanwhile you can fry the cut up chicken without or with seasoning to your taste, in another pot. After the rice has boiled for the 20 minutes as suggested above, add the fried up chicken to it. Add the celery, the black pepper, the butter, and the fine leaf thyme. Stir and allow to cook for another 10 to 15 minutes. (You can always add water to ensure the rice is totally cooked. )

Serve hot or stale. Enjoy.

Cook-up. - Guyana's best!

This is the most popular dish cooked by many Guyanese and other Caribbean nationals...In Trinidad it is known as "pillou". But in Guyana it what we call "cook-up" The name itself is a give way. Meaning you can almost add "anything" to this pot as it boils.

What you really need to cook this fantastic meal?

1 large onion
4 fegs garlic
Pepper to your likeness ( one whole pepper for me is enough)
2 lbs beef (with bone is good) or chicken (or simply fry fish and eat on top of cook-up when done)
1 and 1/2 pints rice
2 tablespoon cassareep
Salt to taste
Fine leaf thyme/married man poke (don't know the real name)
1/2 stick butter
2 tins black eye
1 tin Channa (chick peas)

Cut up in small pieces garlic, onion and pepper and fry in hot oil. Add cassareep whilst frying seasoning. Then add 4 pints of water and beef. ( some folks like to fry meat in seasoning before adding water. Fry chicken separately before adding to cook-up pot.) add salt and fine leaf thyme.


Pressure, if it is beef or boil until tender. Then add rice. When rice near finish cooking add butter. Also add the black eye and channa at least 10 minutes before cook up is finish cooking.

Serve hot. Eat great also when stale.
